Bruce Pandolfini's books are the best compromise I've seen between too-elementary and too-advanced. I'd particularly recommend "The ABCs of Chess" and "Chess Openings: Traps and Zaps vol 1" (vol 2 is not as good.) If you want a really elementary intro, his "Weapons of Chess" is a good start.
"My System" by Nimzowitsch is the classic modern chess strategy tome, but you need a bit of experience before tackling that.
