In my opinion, the biggest equity gain you can have against playing a weaker player is being more aggressive with the cube. First, you will get drops more often than you think. Second, because your opponent will be making more errors than you, it is ok to double a bit early.
Also, if you see your opponent is taking ridiculously late cubes then obviously you can hold off on the cube a bit more in racing situations.
Other than that, if you believe it is a take I would still take it, even in a racing position, unless you have a very sizable PR edge (5 points or higher).
Following this simple advice gives 80% of the equity gained from "playing the player" in my humble opinion.
The rest comes from watching your opponents checker play. Sometimes I will see a player who is scared to leave blots and plays too safe, so I will play more aggressively then.
