"Some of the alternatives include leaving 3 blots. We might just as easily lose a gammon when 3 blots are scooped up as when 4 are."

If all the available blots are scooped up I agree there is not much more gammons lost if we leave 4 blots instead of 3. You are jumping ahead though; it would be much harder for them to scoop up 3 or more blots when only 3 are left.

Also it is much harder if only two blots are left.
