I've mentioned this book by Geoff Colvin before. One nice concept he mentions is similar to your comment about shooting for the moon. He draws three concentric circles: your comfort zone, your learning zone, and your panic zone. The trick is to constantly stay in your learning zone, even as the zones shift and stuff starts to move from your learning zone to your comfort zone.
