I think you may have answered your own question. If you start with 4a4a the play is "distorted" by the fact that a doubled gammon wins the match.

But six or eight point matches would make sense, and I don't know the backstory of why they aren't played very often.

2-pointers make no sense to me, although I've probably seen 2-pointers used more than all other even match lengths combined. Unless one of the players doesn't understand 2a2a cubing strategy, it's exactly the same as a one-pointer.
