I like the one pair of dice approach, with a clock. Somehow when I don't have a specific target for my 'tap' it feels more tiresome. Also, if your clock has a light on top, that can serve to show spectators who's on roll if you're using a baffle box.
Also, if you're someone who plays a whole lot of backgammon and you have a board with a light-colored field, I'd expect the field to get noticeably worn/dirty before its time if people are tapping the surface on the right side as opposed to the frame.
Boston Open will be 'one pair of dice' based largely on a positive experience of the NY Metro taking that approach.
