illegal moves got corrected all the time even though the player had picked up his dice.

"All the time" means sometimes they did and sometimes they didn't. When there was a disagreement over what the dice were, it was hard to win a dispute over what they were were with no dice on the table -- being insistent and having a timid opponent helped.

The standard guideline has always been that the player destroying evidence should be at a disadvantage in the event of a dispute.

Actually, in a dispute over a dice roll with no clock, the opponent of the player destroying evidence was always at a disadvantage.
