Yes, one only keeps track of the difference between the pip counts when you do a running count from the start of the game.

So if contact is suddenly broken and the cube decision is close, you still have to stop and do some counting to obtain the absolute pip count, right?

Yes but in theory you'd only have to count one side so it'd be super simple & fast. Also, that happens almost never.

If you've seen videos of Mochy stopping to count it is not for the above reason. It's either because he wasn't using a running count (highly likely) or he was double checking his running count work. I hope nobody took my original post that we can do a running count we always do a running count. I generally only do it in important matches (or to show off in a chouette) and don't bother with it otherwise. It's not really that important and I can count fast enough if needed there won't be much of a stall.
