Awareness.
One must know the kick CANNOT be recovered by the kicking team until it has gone ten yards (unless otherwise previously touched by the receiving team). There is a line judge standing there and instant replay to confirm -- one cannot get away with an early touch/recovery. In holding, to cite your example, the penalty is, at times, a matter of interpretation so the offending party may not think he held and the referee does -- voila, penalty. Also, there is the possibility, particularly in the line, that a holding call may be missed -- so, perhaps it is worth the risk. However, on an on-side kick the ten yard rule is black/white and it will not be missed -- you have to play with but a wee measure of intelligence.
The kicking team kicks from the 30 yard line, the ball must reach the 40 yard line, and there is a wide white line continuously across the field at that point.
Adrenaline, passion, frantic-ness, speed, anticipation, and all other such factors and emotions do not excuse the fact that one has to play with some intelligence and awareness of circumstances -- to neglect that fact is only to enable the incompetent. God knows such compromise is all too prevalent in our society -- in every regard.
