What I took Stick to be saying was that the definition of "professional" in terms such as "9 dan professional" is not "someone who makes a living playing go" but rather "someone who achieves certain go-playing standards." This is not a conjecture but simply a linguistic fact, and even if all professional go players made millions playing go, it would still be a fact.
It's probably true that most professional go players earn some income from go, but I doubt that most of them "make a living" from it in the sense of relying solely or almost solely on go. See this discussion for some anecdotal information.
