(TK) Why is this better than using a MET?

(NTK) OK good point for pairing purposes. Although I still strong think pairings should be random like FT System.

(TK)One player may no longer be in the tournament later.

(NTK) Yes this could be an issue. Later will almost always be after the players' next matches finish as it is very unlikely that a player has two consecutive very slow matches. But, yes, if it is possible that one of the players involved could be out after a loss, the tardy match must be finished.
