Use of doubling cube does not equate gambling. You can gamble without using the cube and you can play with the cube without gambling. Doubling cube adds another layer of complexity to the game and is therefore a standard part of competitive backgammon. If your goal is to just have fun, then all those variants fit your bill perfectly.
