Software that could analyse the video feed from a high quality recording device (above the table?) and determine checker positions, dice rolls, and then record the position in real time with little interaction from the players is probably not so far fetched.

I had a Georgia Tech student look at the static case for this, (just analyze a single digital photo of a board), and he was able to determine the location of the 30 checkers, but not if they were stacked up, but the dice and cube weren't do-able for him. The problem was the dice were too small and mostly that he wasn't sure where to look for them. Same basic problem for the cube. Parsing out a video feed would also be difficult because it would be difficult to actually know when each move ended was over.
