A. Your opponent volunteered the statement of his own accord, so there is nothing unethical about basing your decision on the knowledge that he said, "78 to 90, you are ahead 12 pips." Whether the strategically proper thing to do is to double is an entirely different question, since you may not know if your opponent is intentionally trying to trick you. You just have to use your best judgment.
B. Taking back a double? Doesn't sound legal to me under any circumstances.
C. Intentionally tricking does seem a bit unethical to me but I don't have any experience playing in a tournament, so I don't know. By the way, it doesn't follow from the fact that he said, "Ha, ha, I tricked you into a bad double" that he is telling the truth this time either.
