Strictly speaking you are right.
However, the goal is to achieve an equity more than 1, without turning the cube, not to just roll the dice for another turn or many other turns for that matter, and finally use the cube to double the opponent out.
IMHO the assumptions of a) you can't regain your market and b) you may overshoot the equity mark of unity in the next dice exchange are a little too improbable, given that the losing chances are already about 5/8.
I think, what you are describing is (strictly speaking) not a too good position, but a position from where you may arrive at a too good position without any risk.
I think, we are comparing two models, in one of them we don't need to make any further assumptions to roll on, whereas in the other model we need to make sure that some preconditions are fulfilled.
I think the first model comes closer to the real case .
