I disagree that it simplifies the game.
To address your specific examples it is just as likely that those rolls have not been played yet making them more likely and also just as likely that these differences make a play choice closer instead of more clear.
55 and 66 are easy to play in a race. How is starting a new game simpler than finishing a race?
It also won't speed up the game. Mental energy must be spent keeping track of what has been played and even if that is given every situation involving counting shots or doing a 1 ply or 2 ply analysis will be different than what one already knows.
