A compromise way to do it is have them play a single last match, but the undefeated player starts with a couple of points on the scoresheet. I am sure I have seen this done, but I don't remember when or where.

I don't know what the fair amount should be in, say, an 11-point match, but maybe the number-crunchers here can come up with an answer. If there is doubt, I'd run it a bit in favor of the undefeated person, since tournaments reward winning, after all.
