Some facts to ponder

Joe, you have created the "ideal" event. One more innovation might be to list possible side events on the tournament brochure or entry form and let the players vote for what they prefer...there could be 10 or so possibilities including my favorites, backgammon-to-lose, a chouette tournament, Nackgammon, RandomGammon, SlotGammon, SpeedGammon, poker, gin or hearts tournament, etc. Then offer what most people voted for. (Players could also turn in their vote when they register on Thursday or Friday and the events offered on Sunday.)
Some places might even offer a ping pong, golf, or tennis if those activities are available. Maybe even a blackjack tournament.
And because most players won't vote for something really new or different, make sure that one of those is offered just for the fun of it.
Let's also give some thought to having some Sunday side events that Novice and beginners can compete in and enjoy. Hypergammon would be great; the ability to sign up for a one or two hour seminar for beginners, and allow any family member of friend not in the tournament to attend as well.
You don't have to have a SuperBowl on Sunday night to plan a fun reception or group dinner at a restaurant for everyone who is still in town...which is a lot of people who don't leave until the following day.
No extra cost, and no distraction from the main event, but suddenly we have something that truly is more fun to come to for all. Why the hell not?
Well, one reason is that the TD's already have their hands full just planning, marketing and running the main event. So let them do that, and let the USBGF form a Tournament Advisory Committee including people like Joe Russell and others to come up with some good ideas for Sunday for people out of the main event and after the main event, and then all they need to do is send ONE OR TWO volunteers to the tournament to help schedule, set up and run these events to help the TD (under the direction of the TD of course) so that the TD and his staff can stay focused and involved in the main event. That's why the USBGF was formed...to help promote and improve the game for the players...here's a way to do that. If tournaments are more fun and interesting and run more smoothly, that certainly will help grow the game and tournaments, and we certainly need to offer more to the new commers than just a 10 minute orientation and give them a table and an opponent to make them want to come back.
